This is the perfect high-protein "all-in-one" meal. We’re making two types of kebabs—beef and chicken—using the same flavor-packed seasoning base. It’s efficient, healthy, and looks incredible when served!
The "Secret" Spice Blend
For both the beef and chicken (separate bowls), use this blend to get that authentic Middle Eastern taste:
Shish Taouk or Shawarma seasoning (1.5 tbsp each)
Garlic Powder & Cayenne Powder (for a little kick)
Paprika (for color and sweetness)
Fresh Aromatics: ½ onion (finely grated/blended), 2 cloves of garlic (minced), fresh mint, and parsley
Ingredients
Meat: 500g Ground Beef & 500g Ground Chicken
Base: 3-4 Potatoes, sliced into rounds and seasoned with oil and dried herbs
Veggies: Onion rings, cherry tomatoes, and whole yellow peppers
The Savory Baking Liquid: ½ cup tomato sauce diluted with ½ cup water, plus a pinch of salt, pepper, and garlic powder
To Serve: Warm Pita bread and your favorite garlic sauce or yogurt
Instructions
Prepare the Aromatics: Blend your onion, garlic, mint, and parsley into a fine paste.
Season the Meat: In two separate bowls, mix your beef and chicken with half of the blended aromatics each. Add your Shish Taouk/Shawarma seasoning, garlic powder, cayenne, and paprika. Mix well.
The Shaping Hack: Lay a piece of plastic wrap over your meat on a skewer. Use a bench scraper or the back of a knife to press and roll the meat into a perfect, smooth log. This ensures they cook evenly!
The Tray Setup: Arrange your seasoned potato rounds around the edge of a baking sheet to create a "crust." Layer onion rings in the center.
Assemble & Sauce: Lay your beef and chicken skewers across the onions. Tuck in your tomatoes and peppers. Whisk your tomato sauce, water, and seasoning together, then pour it evenly over the entire tray so it bathes the potatoes and veggies.
The Perfect Bake Cover: Cover the tray tightly first with a layer of parchment paper, and then seal it completely with aluminum foil. This traps the steam, making the potatoes incredibly tender and keeping the meat perfectly juicy.
Bake: Bake at 200°C (400°F) for about 25-30 minutes. (Optional: You can remove the foil for the last 5 minutes if you want a little extra color on top!)
The Serve: Once the meat is juicy and the potatoes are golden, top with fresh herbs. Pull the meat off the skewer into a pita, add your sauce, and enjoy!
