Ingredients
• 1 cup fresh raspberries (or your choice of fruit)
• 1 cup plain fat-free Greek yogurt
• 1 scoop vanilla protein powder (if skipping, add 1 tsp vanilla extract )
• 1 tsp of honey if you like it more sweet
• 1/2 heaping cup dark chocolate chips
• 1 tsp coconut oil (to help the chocolate melt smoothly)
Instructions
1. Mix: In a bowl, combine the Greek yogurt and vanilla protein powder until smooth.
2. Fold: Gently fold in your raspberries so they are evenly distributed.
3. Form & Freeze: Scoop the mixture into bar shapes on a parchment-lined tray (or use a silicone mold). Freeze for 3 to 4 hours (or overnight for best results).
4. Melt: Once the bars are solid, melt the dark chocolate chips with the coconut oil in the microwave in 30-second intervals.
5. Coat: Dip each frozen bar into the melted chocolate until covered.
6. Set: Place the bars back in the freezer for 20 minutes to let the chocolate shell harden.
