4 of your favorite tortillas
Shredded cheese of your choice
1 tbsp butter
1 clove garlic, minced
Fresh parsley, finely chopped
Yogurt Sauce Ingredients
Greek yogurt
Fresh coriander (cilantro)
1 lime, juiced
1 clove garlic
Instructions
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Add the ground beef, yellow onion, red pepper, onion powder, oregano, paprika, cayenne pepper, salt, and pepper to a large mixing bowl.
Mix everything thoroughly until the spices and vegetables are well incorporated into the meat.
Divide the meat mixture into four equal portions and roll them into balls.
Grab your tortillas and place one meatball on each, smashing the beef down evenly until it covers the entire surface area of the tortilla.
Sprinkle an even layer of your favorite shredded cheese right over the meat.
Melt the butter in the microwave, then mix it with the minced garlic and chopped parsley.
Brush the garlic-herb butter over the tortillas for extra flavor and crispiness.
Bake in the oven for 20 minutes, or until the meat is fully cooked and the edges are beautifully golden.
While they bake, add the Greek yogurt, coriander, lime juice, and garlic to a blender and process until smooth.
