If you are looking for a satisfying, macro-friendly meal that ticks every single box savory, sweet, creamy, and crunchy—these Loaded High-Protein Sweet Potato Boats are the ultimate answer. This recipe transforms a simple baked sweet potato into a nutrient-dense, high-protein powerhouse by layering it with seasoned ground beef, warm melted cheese and corn, a crisp fresh salsa, and a perfectly runny fried egg.

It is an incredible option for a post-workout lunch or a hearty dinner meal prep. The natural sweetness of the fluffy potato paired with the savory beef and the richness of the egg yolk creates a perfect balance of flavors in every single bite!

    Prep time, Cook time, Servings

    • Prep time: 15 minutes

    • Cook time: 40 minutes (mostly oven time)

    • Yield: 2 servings

    Ingredients

    The Potato Base

    • 1 large sweet potato, sliced perfectly in half lengthwise

    • 1 tsp avocado oil or olive oil

    • Seasonings: Salt, black pepper, and a pinch of garlic powder or chili flakes to taste

    The High-Protein Protein Layer

    • ½ lb (225g) lean ground beef (or ground turkey)

    • Salt and black pepper to taste

The Cheesy Corn & Fresh Toppings

    • ½ cup sweet corn kernels (canned or frozen)

    • ¼ cup shredded mozzarella (or any low-fat melting cheese)

    • ½ cup diced fresh salsa (cucumber, red onion, and tomato finely chopped)

    • 2 large eggs

    • Freshly cracked black pepper (for the egg)

    Step-by-Step Instructions

    1. Roast the Sweet Potatoes

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Take your halved sweet potato, drizzle the flesh with avocado oil, and season generously with salt, black pepper, and your choice of spices. Place them flesh-side down on the baking sheet and roast for 35–40 minutes until the skin is wrinkled and the inside is completely tender.

    2. Brown the Beef

While the potatoes are roasting, heat a non-stick skillet over medium-high heat. Add the ground beef, seasoning it with a pinch of salt and pepper. Cook for 5–6 minutes, breaking it apart with a spatula, until fully browned and cooked through. Drain any excess fat and set aside.

    3. Make the Cheesy Corn

In a small pan or right in the microwave, heat your sweet corn kernels until hot. Toss the warm corn with the shredded mozzarella cheese immediately so it gets beautifully melted, stringy, and gooey.

    4. Mash the Potato Boats

Once the sweet potatoes are done, flip them over on a plate. Use a fork to gently mash the inside flesh right inside the skin, creating a soft, fluffy bed for your toppings while keeping the outer skin intact as a sturdy boat.

    5. Layer Your Toppings

Spoon a generous amount of the seasoned ground beef directly over the mashed sweet potato. Next, layer on the warm, ultra-cheesy sweet corn, followed by a hefty spoonful of your crisp cucumber, onion, and tomato salsa.

    6. Fry the Egg and Assemble

In a small non-stick pan, fry your eggs sunny-side up until the whites are fully set but the yolk remains perfectly runny. Carefully slide one fried egg on top of each loaded sweet potato boat. Finish with a crack of fresh black pepper over the yolk, dig in with a fork, and let that rich yolk run through all the delicious layers!
