    If you are craving rich, comforting Italian flavors but want a meal that leaves you feeling energized instead of heavy and sluggish, this Italian-Style Loaded Sweet Potato is a total game-changer.

    Instead of traditional heavy pasta, we use a sweet, fluffy baked sweet potato as our base. Smashed open and layered with ribboned cheese, rich marinara sauce, and savory seasoned ground meat, To bring it all together, we swap heavy cream for a dollop of high-protein, tangy Greek yogurt, a drizzle of herbaceous pesto, and juicy, air-fried blistered cherry tomatoes. It’s naturally gluten-free, packed with vitamins, and incredibly macro-friendly!

    Ingredients

    The Base & Melty Cheese

    • 1 large sweet potato, baked until tender and fluffy

    • ¼ cup low-fat block cheese (like Mozzarella or Monterey Jack), shaved into thin ribbons using a peeler

    The Italian Layers

    • ¼ cup your favorite marinara or pasta sauce

    • 100g (approx. 3.5 oz) lean ground meat (beef or turkey), browned and seasoned with Italian herbs, garlic powder, salt, and pepper

    • 2 tbsp plain Greek yogurt (the secret swap for sour cream/heavy cream to boost protein and add a delicious tang!)

    • 1 tsp green basil pesto


    The Air-Fried Tomato Topping

    • ½ cup cherry tomatoes

    • 1 tsp olive oil

    • A pinch of sea salt and dried oregano

    • Fresh dill (for garnish)

    Step-by-Step Instructions

    1. Blister the Cherry Tomatoes 🍅

    Toss your cherry tomatoes in a tiny bowl with one teaspoon of olive oil, a pinch of sea salt, and a dash of dried oregano. Place them into your air fryer basket and cook at 400°F (200°C) for 6–8 minutes until they are slightly blistered, juicy, and bursting with sweet, concentrated flavor. Set aside.

    2. Smash the Sweet Potato 🍠

    Take your warm, fully baked sweet potato and slice it down the middle, opening it up into a bowl shape. Use a fork to gently smash and fluff up the golden interior.

    3. Layer the Cheese and Marinara

    While the potato is hot, use a vegetable peeler to shave thin ribbons of cheese directly over the sweet potato flesh so it begins to melt instantly. Spoon your warm marinara sauce generously over the melting cheese.

    4. Add the Protein

    Pile your seasoned, browned ground meat directly on top of the marinara layer, packing the sweet potato bowl to the brim.

    5. The Creamy & Fresh Finish

    Add a generous dollop of cold, thick Greek yogurt right in the center. Drizzle your green basil pesto over the meat and yogurt, then arrange your hot, air-fried blistered cherry tomatoes on top.
