    Prep time, Cook time, Servings

    • Prep time: 20 minutes

    • Cook time: 45 minutes

    • Yield: 3-4 servings

    Ingredients

    For the Onion Pod Shells

    • 3 large yellow onions

    • Water (for boiling)

    For the High-Protein Filling

    • ½ lb (225g) lean ground beef (or extra-lean turkey/lamb)

    • ½ cup long-grain white rice (uncooked)

    • ½ red bell pepper, finely diced

    • 2 cloves garlic, minced

    • A generous handful of fresh parsley, finely chopped

    • Seasonings: 1 tsp cumin, ½ tsp paprika, salt, and black pepper to taste

    For the Savory Baking Sauce

    • 2 tbsp tomato paste

    • 1 cup water (or low-sodium bone broth for extra protein)

    • ½ tsp cumin

    • ½ tsp paprika

    • A pinch of cayenne pepper (optional, for heat)

    • Salt and black pepper to taste

    For Serving & Garnish

    • 1 cup plain Greek yogurt (0% or 2% fat, used as the creamy base)

    • Fresh parsley, chopped (for garnish)

    Step-by-Step Instructions

    1. Prep and Parboil the Onions

Slice off the top and bottom stems of your large yellow onions, then peel away the tough outer skin. Make a single deep vertical cut from the top down to the center core of each onion (this allows the layers to separate easily later). Bring a pot of water to a boil, drop the onions in, cover with a lid, and let them boil for 10–20 minutes. This softens the onions so they lose their sharp bite and become flexible. Drain and let them cool enough to handle.

    2. Mix the Filling

While the onions boil, prepare your protein filling. In a medium bowl, combine the uncooked lean ground beef, uncooked white rice, finely diced red bell pepper, minced garlic, chopped fresh parsley, cumin, paprika, salt, and black pepper. Mix thoroughly with your hands until the seasonings are completely incorporated.

    3. Separate and Stuff the Pods

Carefully separate the softened onion layers one by one. They will naturally peel away into perfect little cup-like pods. Take a small spoonful of the raw beef and rice mixture, place it into the center of an onion layer, and gently fold or roll the onion edges over the meat to seal it.

    4. Arrange and Sauce

Preheat your oven to 375°F (190°C). Arrange your stuffed onion pods snugly, seam-side down, in a round baking dish or oven-safe skillet. In a blender or small bowl, whisk together the tomato paste, water (or broth), cumin, paprika, salt, and pepper until smooth. Pour this rich savory sauce evenly over the tops of all the onion pods.

    5. Cover and Bake

Dampen a sheet of parchment paper with water, squeeze out the excess moisture, and lay it tightly over the baking dish (this creates a perfect seal to trap steam so the rice cooks perfectly inside the meat). Bake in the oven at 375°F for 35–40 minutes until the onions are completely tender, caramelized, and the meat-and-rice filling is fully cooked through.

    6. Plate and Serve

To serve, spread a generous layer of cool plain Greek yogurt across the bottom of your plate. Arrange 3 or 4 hot, juicy stuffed onion pods directly on top of the yogurt. Spoon a little extra of the rich savory pan sauce over the pods and garnish with fresh chopped parsley. Dig in and enjoy!
