    The real secret to getting that golden, pan-seared crunch lies in using the residual pan drippings from roasting your peppers, onions, and taco-seasoned ground beef. By whisking a bit of paprika and oil right into the flavorful sheet-pan juices, you create an effortless marinade to coat the tortillas before crisping them up on the stovetop with melted mozzarella!

    Ingredients

    Sheet-Pan Veggies & Beef

    • 1 medium yellow onion, diced

    • 1 red bell pepper, diced

    • 1 orange bell pepper, diced

    • 1 tbsp olive oil (for roasting)

    • 1 lb (450g) lean ground beef (or ground turkey)

    • 1 packet (or 2 tbsp) taco seasoning

    • Salt and black pepper, to taste

    Tortilla Coating & Filling

    • 3–4 large flour tortillas

    • 1 tbsp olive oil or avocado oil

    • ½ tsp smoked paprika

    • 1.5 cups shredded mozzarella cheese

    • Fresh parsley or cilantro, finely chopped (garnish)

    Step-by-Step Instructions

    1. Roast the Veggies 🧅🫑

    Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper. Add the diced onion, red bell pepper, and orange bell pepper. Drizzle with 1 tablespoon of olive oil, season with a pinch of salt and pepper, and toss to coat. Roast for 10 to 15 minutes until tender.

    2. Bake the Taco Beef 🥩

    Remove the sheet pan from the oven. Push the veggies slightly to create room and add the ground beef directly onto the pan, breaking it into small crumbles. Sprinkle the taco seasoning evenly over the beef and vegetables. Return to the oven and cook for an extra 15 minutes, or until the beef is fully browned and cooked through.

    3. Prep the Tortilla Oil Sauce 🥣

    Transfer the cooked beef and vegetable mixture into a bowl, leaving all the rich juices and roasted flavor behind on the sheet pan paper. Add 1 tablespoon of olive or avocado oil and ½ teaspoon of paprika directly onto the baking sheet, stirring it into the leftover pan drippings to create a flavor-packed coating oil.

    4. Dip & Stuff the Quesadillas 🧀

    Press each flour tortilla flat onto the baking sheet, flipping it so both sides soak up the savory paprika-oil mixture. Layer shredded mozzarella cheese onto one half of each tortilla, top with a generous spoonful of the warm taco beef and vegetable filling, and fold the tortilla over to seal it into a half-moon shape.

    5. Sear Until Crispy ✨

    Heat a skillet over medium heat. Place the folded quesadillas in the pan and cook for 2 to 3 minutes per side, pressing down lightly, until the tortillas turn deep golden brown and the cheese is completely melted.
