If you’re looking to turn humble carrots into a high-protein, flavor-packed meal, this Mediterranean-inspired plate is for you! Sweet carrots are roasted until tender with a garlic-onion seasoning, then layered over a quick homemade garlic Greek yogurt dip.

Topped with savory ground beef cooked with onions, bell peppers, and warm spices, plus crumbled feta and fresh parsley, every bite offers a delicious balance of creamy, savory, and caramelized flavors.

    Prep time, Cook time, Servings

    • Prep time: 10 minutes

    • Cook time: 30 minutes

    • Yield: 2 servings

    Ingredients

    Roasted Carrots

    • 4 large carrots, peeled and sliced lengthwise into halves or quarters

    • 1 tbsp olive oil

    • ½ tsp garlic powder

    • ½ tsp onion powder

    • Salt and black pepper, to taste

    • 1 tsp sriracha (optional, for a kick of spice)

    Garlic Greek Yogurt Dip

    • ¾ cup plain zero-sugar Greek yogurt

    • 1 clove fresh garlic, finely grated or minced

    • Salt and black pepper, to taste

    Spiced Ground Beef

    • ½ lb (approx. 225g) extra lean ground beef (or ground turkey)

    • ¼ yellow onion, finely diced

    • 2 tbsp bell pepper, finely diced

    • ½ tsp garlic powder

    • ½ tsp paprika or cumin

    • Salt and black pepper, to taste

    Toppings & Garnish

    • 2 tbsp feta cheese, crumbled

    • Fresh parsley, finely chopped

    Step-by-Step Instructions

    1. Roast the Carrots 🥕

Preheat your oven to 300°F (150°C). Arrange the peeled and sliced carrots on a baking sheet lined with parchment paper. Drizzle with olive oil, sprinkle with garlic powder, onion powder, salt, black pepper, and sriracha (if using). Toss to coat evenly and roast for 30 minutes until tender and slightly caramelized.

    2. Cook the Spiced Ground Beef 🥩

While the carrots are roasting, heat a skillet over medium-high heat. Add the ground beef, diced onion, diced bell pepper, garlic powder, paprika (or cumin), salt, and black pepper. Sauté for 6–8 minutes, breaking up the beef with a spoon, until fully cooked through and browned.

    3. Mix the Garlic Yogurt Dip 🥣

In a small bowl, combine the Greek yogurt, finely grated fresh garlic, and a pinch of salt and pepper. Stir until smooth, then spread evenly across the base of your serving plate.

    4. Assemble & Serve ✨

Layer the warm roasted carrots directly over the creamy garlic yogurt. Spoon the cooked spiced beef over top, then garnish with crumbled feta cheese and fresh parsley. Serve immediately and enjoy!
