½ tsp onion powder
Salt and black pepper to taste
Topping & Serving
¼ cup plain Greek yogurt (for extra protein and creaminess)
Fresh parsley for garnish
Warm flour or corn tortillas (optional)
Step-by-Step Instructions
1. Marinate the Beef 🥩
In a bowl, combine the sliced beef, grated small onion, 1 tablespoon of Greek yogurt, cumin, cinnamon, garlic powder, paprika, salt, and black pepper. Mix thoroughly until the beef is well coated. Cover and let it marinate in the fridge for at least 1 hour to tenderize.
2. Roast the Veggies & Chickpeas 🍆🧆
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Rub the whole eggplant and red bell pepper with a light drizzle of olive oil.
In a separate small bowl, toss the rinsed and dried chickpeas with 1 teaspoon olive oil, paprika, garlic powder, onion powder, salt, and pepper. Spread them onto part of the tray.
Bake for about 30 minutes until the eggplant and pepper are soft and charred, and the chickpeas are golden and crispy.
3. Make the Roasted Veggie Mash 🌿
Once roasted, remove the skin and stem from the warm eggplant and red bell pepper. On a cutting board or in a large shallow bowl, chop and mash them together until smooth yet rustic. Fold in the chopped fresh parsley, season with salt and pepper, and spread the mash along the bottom of your serving bowl.
4. Sear the Marinated Beef 🍳
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Add the marinated beef strips and cook for 4–6 minutes, tossing until cooked through and nicely browned on the edges.
5. Assemble the Bowl 🥣
Layer the warm, tender beef directly over your roasted eggplant and pepper mash.
Scatter the crispy baked chickpeas on top.
Add a dollop of cool Greek yogurt in the center and garnish with fresh parsley.
Serve with warm tortillas for scooping, or enjoy as a low-carb bowl on its own!
