    Charred Paprika Corn

    • 1 ear fresh corn on the cob (or 1 cup corn kernels)

    • 1 tsp olive oil

    • ½ tsp smoked paprika

    • Pinch of salt

    Creamy Garlic-Avocado Sauce

    • 1 ripe avocado

    • 2 tbsp plain Greek yogurt

    • ½ tsp garlic powder

    • ½ tsp onion powder

    • 1–2 tbsp water or fresh lime juice (to thin to desired texture)

    • Salt and pepper, to taste

    For Assembly

    • 6 small corn tortillas

    • Fresh cilantro, chopped (for garnish)

    Step-by-Step Instructions

    1. Roast the Paprika Corn 🌽

    Brush the ear of corn with olive oil, paprika, and a pinch of salt. Roast in a hot skillet over medium-high heat (or bake in the oven at 400°F / 200°C) for 10–12 minutes, turning occasionally, until lightly charred on all sides. Allow it to cool slightly, then carefully cut the charred kernels off the cob with a sharp knife.

    2. Cook the Beef & Black Bean Filling 🥩🫘

    In a pan over medium heat, brown the ground beef until fully cooked through, breaking it apart with a spoon. Add the rinsed black beans, sriracha, and fajita seasoning. Stir well and let everything simmer together for 2–3 minutes so the flavors fuse into a thick, savory filling.

    3. Blend the Avocado Sauce 🥑

    In a food processor, small blender, or bowl, mash together the ripe avocado, Greek yogurt, garlic powder, onion powder, and a pinch of salt and pepper. Add a splash of water or lime juice to get a silky, spreadable consistency.
