1 cup plain non-fat Greek yogurt
1 tbsp olive oil
1 tsp Italian herb seasoning
1/2 tsp garlic powder
1/4 tsp salt
Seasoned Chicken Base
1 lb raw chicken breast, ground or finely blended
2 tbsp fresh basil, finely chopped
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper, to taste
Roasted Veggie & Pizza Toppings
1/2 medium yellow onion, sliced
1/2 bell pepper (red or yellow), sliced
1/2 cup mushrooms, sliced
1 tbsp olive oil (for roasting veggies)
1/2 cup marinara or pizza sauce
3/4 cup shredded part-skim mozzarella cheese
6–9 turkey pepperoni slices (optional)
Step-by-Step Instructions
Roast the Veggies: Toss sliced onions, bell peppers, and mushrooms with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast at 400°F (200°C) for 12–15 minutes until tender. Set aside.
Make the Dough: Combine flour, baking powder (if using), Greek yogurt, olive oil, dried herbs, garlic powder, and salt in a large bowl. Knead into a soft dough ball. Divide into 3 equal portions, roll into round flatbread discs on a parchment-lined baking sheet, and crimp the outer edges slightly to form a crust border.
Add Chicken Layer & Pre-Bake: Blend raw chicken breast with fresh basil, garlic powder, onion powder, salt, and pepper until smooth. Form into 3 balls, place one in the center of each dough disk, and press flat to cover the base. Bake in the oven at 400°F (200°C) for 10–12 minutes until the chicken starts cooking and the dough turns slightly pale-golden.
Top & Finish Baking: Remove from the oven, spoon marinara sauce directly over the warm chicken layer, and pile on the roasted veggies, turkey pepperoni (if using), and shredded mozzarella.
