If you’re looking for a fun, low-carb meal that doesn’t skimp on flavor or protein, these cheesy zucchini beef skewers are a must-try!

Succulent, seasoned ground beef is rolled up inside thin zucchini ribbons with melty mozzarella cheese, brushed with a savory garlic-paprika oil, and baked until golden and bubbling. Served over a quick, homemade high-protein tzatziki made with Greek yogurt, grated cucumber, and dill, every bite delivers a delicious contrast of warm, savory goodness and cool, tangy freshness.

    Prep time, Cook time, Servings

    • Prep time: 15 minutes

    • Cook time: 20 minutes

    • Yield: 4 skewers (approx. 2 servings)

    Ingredients

    Seasoned Beef & Zucchini Rolls

    • 2 medium zucchini, washed and ends trimmed

    • ½ lb (225g) extra-lean ground beef

    • 2 green onions, finely chopped

    • ¼ red or yellow bell pepper, finely diced

    • ½ tsp paprika

    • ½ tsp garlic powder

    • ½ tsp onion powder

    • Salt and black pepper, to taste

    • ½ cup shredded mozzarella cheese

    • Wooden skewers (soaked in water for 10 minutes, optional)

    Olive Oil Brush

    • 1 tbsp olive oil

    • Pinch of garlic powder, paprika, salt, and pepper

    Homemade High-Protein Tzatziki

    • ¾ cup plain Greek yogurt

    • ½ cup cucumber, grated and squeezed dry of excess water

    • 1 tbsp fresh dill, finely chopped

    • ½ tsp garlic powder

    • ½ tsp onion powder

    • Salt and black pepper, to taste

    Step-by-Step Instructions

    1. Mix the Tzatziki Sauce 🥒

In a bowl, combine the Greek yogurt, squeezed grated cucumber, chopped dill, garlic powder, onion powder, salt, and black pepper. Mix thoroughly until smooth and set aside in the fridge so the flavors meld together.

    2. Prep the Zucchini Ribbons 🔪

Using a sharp chef’s knife or mandoline, slice the zucchini lengthwise into thin, flexible ribbons. Lay the slices on paper towels to absorb any excess moisture.

    3. Mix the Beef Filling 🥩

In a separate bowl, combine the ground beef, chopped green onions, diced bell pepper, paprika, garlic powder, onion powder, salt, and black pepper. Mix well until everything is evenly distributed.

    4. Roll & Skewer 🧀

Lay out the zucchini ribbons. Spread a thin, even layer of the beef mixture along each slice, then top with shredded mozzarella cheese. Roll each zucchini slice up tightly to create pinwheels. Thread 3 to 4 rolls onto a pair of wooden skewers to hold them together securely.

    5. Brush & Bake ✨

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Mix 1 tablespoon of olive oil with a pinch of paprika, garlic powder, salt, and pepper. Brush the oil mixture generously over the tops of the skewers. Bake for 18–20 minutes until the beef is fully cooked through and the cheese is melted and browned.

    6. Assemble & Serve 🍽️

Spread a thick layer of the homemade tzatziki across your serving plate. Place the hot skewers directly over the sauce, drizzle with any extra pan juices, and serve immediately!
