    Instead of blending the crema into a runny liquid, this recipe keeps things rich and thick. Mashing fresh avocado right into Greek yogurt with chopped cilantro and lime gives you a sturdy, flavorful base that holds up under warm salmon. Assembled on toasted corn tortillas with diced red onion and extra cilantro, these come together in under 20 minutes and are packed with clean protein.

    The Sweet & Spicy Caramelized Salmon

    • 2 salmon fillets (approx. 300g total), skin off

    • ½ tsp paprika

    • Salt and black pepper to taste

    • 1 tbsp sweet chili sauce

    • 1 tsp brown sugar

    The Thick Avocado Cilantro Crema

    • ½ cup plain Greek yogurt (0% or low-fat)

    • ½ medium ripe avocado, mashed

    • 2 tbsp fresh cilantro, finely chopped

    • 1 tbsp fresh lime juice

    • Salt and black pepper to taste

    • 4 small corn tortillas, warmed/charred

    • 2 tbsp red onion, finely diced

    • Fresh cilantro leaves for garnish

    Step-by-Step Instructions

    1. Prep & Bake the Salmon 🐟

    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the salmon fillets on the tray and season both sides with salt, black pepper, and paprika.     In a bowl, combine the Greek yogurt, mashed avocado, chopped fresh cilantro, lime juice, salt, and black pepper. Stir everything together by hand with a spoon until evenly incorporated—avoid using a blender so the crema stays thick, rich, and spoonful-ready.

    • Warm your corn tortillas over a hot pan or open flame for a few seconds per side until pliable.
