    Ingredients

    The Air-Fryer Kofta

    • 1 lb (450g) lean ground beef

    • 2 tbsp fresh parsley, finely chopped

    • 1 small onion or green onion, finely minced

    • Seasonings: Salt, black pepper, garlic powder, onion powder, and a touch of cumin

    The Creamy Lemon-Dill Dressing

    • ½ cup plain Greek yogurt

    • Juice of ½ a large lemon

    • 2 tbsp fresh dill, chopped

    • 1 clove of garlic, grated or finely minced

    • Salt and pepper to taste

    The Crunchy Corn & Salad Base

    • 1 cup canned or frozen corn, drained

    • A pinch of paprika and salt (for the corn)

    • A drizzle of oil spray

    • 2 cups iceberg or romaine lettuce, chopped

    • 1 cup cucumbers, diced

    • ½ cup cherry tomatoes, halved

    Step-by-Step Instructions

    1. Shape the Kofta

    In a bowl, mix the ground beef, chopped parsley, minced onion, and seasonings until well combined. Press the meat mixture evenly into the bottom of an air fryer paper liner to form a flat disc. Use a bench scraper or a knife to score the meat into clean, equal rows (this makes them easy to separate into kebab strips after cooking!).

    2. Air Fry the Meat

    Pop the liner into the air fryer and cook at 375°F (190°C) for 10–12 minutes, or until the beef is fully cooked through and beautifully browned. Remove and set aside to rest.

    3. Roast the Corn

    In a small bowl, toss your corn with a pinch of paprika and salt. Place it into a fresh air fryer liner, give it a quick spray of oil, and air fry at 400°F (200°C) for 5–7 minutes until the corn is slightly charred and golden.

    4. Mix the Zesty Dressing

    While the corn is roasting, whisk together the Greek yogurt, fresh lemon juice, chopped dill, minced garlic, salt, and pepper in a small bowl until completely smooth and creamy.

    5. Assemble the Salad

    In a large serving bowl, toss together your chopped lettuce, diced cucumbers, and cherry tomatoes. Pour the creamy lemon-dill dressing right over the veggies and mix until everything is perfectly coated. Top the salad with your warm, roasted sweet corn.

    6. Plate and Serve

    Separate your juicy beef kofta strips along the lines you scored earlier. Serve them right alongside your huge, refreshing crunch salad.
