If you’re craving a juicy, messy fast-food burger but want to skip the heavy bun and the calorie bomb that comes with it, this Healthy In-N-Out "Animal Style" Lettuce Wrap is your new hyper-fixation.

We are completely reinventing the iconic California burger by swapping the bun for a crisp, tightly wrapped iceberg lettuce pocket. Inside, you get a juicy, lean beef patty topped with perfectly melted cheddar cheese and deeply caramelized, slow-cooked onions. But the real star of the show is the homemade, high-protein copycat "Animal Sauce." Made with a base of Greek yogurt, zero-sugar ketchup, mustard, and finely diced pickles, it hits every single flavor note of the original sauce with a fraction of the fat and calories!

    Prep time, Cook time, Servings

    • Prep time: 15 minutes

    • Cook time: 20 minutes (mostly for the slow-cooked onions)

    • Yield: 1 loaded burger wrap

    Ingredients

    The High-Protein Copycat "Animal Sauce"

    • 3 tbsp plain Greek yogurt (the ultimate high-protein swap for mayo!)

    • 1 tbsp zero-sugar ketchup

    • 1 tsp yellow mustard

    • 1 tbsp finely diced pickles

    • 1 tbsp caramelized onions (finely minced)

    The Caramelized Onions

    • 1 large onion, sliced thin and small

    • 1 tsp olive oil

    • A pinch of salt

    The Burger & Wrap

    • 150g (approx. 5 oz) lean ground beef (or ground turkey)

    • 1 slice cheddar cheese (or low-fat cheese slice)

    • 1 large round slice of onion (seared in the pan for structural support!)

    • 3-4 large, clean outer leaves of Iceberg lettuce

    • Salt, pepper, and garlic powder to taste

    Step-by-Step Instructions

    1. Slow-Cook the Caramelized Onions 🧅

Heat a skillet over low-medium heat with a teaspoon of olive oil. Add your thinly sliced onions and a pinch of salt. Cook them slowly, stirring occasionally, for about 15–20 minutes until they are deeply golden brown, sweet, and soft. Once finished, finely chop a tablespoon of them to mix into your sauce, and keep the rest for the burger topping.

    2. Whip Up the Secret Sauce

In a small bowl, whisk together the Greek yogurt, zero-sugar ketchup, yellow mustard, finely diced pickles, and that single tablespoon of minced caramelized onions. Mix until smooth, creamy, and pinkish-gold.

    3. Sear the Patty & Onion Ring

Shape your ground beef into a thin, wide patty and season both sides with salt, pepper, and garlic powder. In a hot skillet, sear the patty for 3–4 minutes on the first side. Flip it over, place a slice of cheese on top, and cover the pan for 2 minutes so the cheese melts beautifully. At the same time, toss a thick, whole round slice of onion into the pan to get a gorgeous sear on both sides.

    4. Assemble the Wrap 🥬

Lay your clean iceberg lettuce leaves flat on a sheet of parchment paper, overlapping them slightly to form a wide base.

    • Place your seared whole onion round down first.

    • Top it with the cheesy burger patty.

    • Pile on a generous mountain of those sweet, slow-cooked caramelized onions.

    • Smother everything in a massive spoonful of your healthy copycat sauce.

    5. The Fast-Food Wrap Hack

Using the parchment paper to help you, fold the sides of the lettuce tightly inward over the burger, then roll it up like a burrito from the bottom. Wrap the parchment paper tightly around it and cut it cleanly down the middle with a sharp knife. Serve immediately while hot, juicy, and crisp!
