    High-Protein Loaded Baked Potatoes 🥔🔥

If you’re looking for the ultimate comfort food that actually aligns with your fitness goals, these Loaded Meat & Cheese Baked Potatoes are it. We are taking the classic, fluffy baked potato and packing it with a deeply flavorful, veggie-infused ground beef, a creamy dollop of high-protein cottage cheese, and a blanket of melted, bubbly mozzarella.

It’s cozy, incredibly satisfying, and packed with the macros you need to fuel your day. Perfect for an easy weeknight dinner or meal prep!

    Prep time, Cook time, Servings

    • Prep time: 15 minutes

    • Cook time: 50–60 minutes (mostly hands-off potato baking!)

    • Yield: 4 loaded potato halves (Serves 2–4)

    Ingredients

    The Crispy Baked Potatoes

    • 4 large russet potatoes (washed and dried)

    • 1 tbsp olive oil (for that crispy skin)

    • A pinch of coarse salt

    • 1–2 tbsp butter (divided, to fluff the inside)

    The Flavor-Packed Ground Beef

    • 1 lb (450g) lean ground beef

    • 1 small onion

    • 2 garlic cloves

    • 1 small sweet bell pepper (red or orange works beautifully)

    • Your favorite seasonings (think paprika, onion powder, salt, black pepper, and a pinch of chili flakes)

    • Optional: 2–3 tbsp of tomato paste or marinara to bring the sauce together

    The Toppings

    • ½ cup cottage cheese (the secret to creamy, high-protein goodness)

    • 1 cup shredded mozzarella cheese (for that epic cheese pull)

    • Fresh dill or chives (finely chopped, for garnish)

    Step-by-Step Instructions

    1. Bake the Potatoes to Perfection

Preheat your oven to 400°F (200°C). Poke a few holes in your potatoes with a fork, drizzle them with olive oil, and rub with a little salt. Place them in a baking dish or directly on the oven rack and bake for 45 to 50 minutes, or until the skin is crispy and the inside is completely tender when pierced with a knife.

    2. Blend the Veggie Base & Cook the Meat

While the potatoes are baking, add the onion, garlic, and sweet bell pepper to a small food processor or blender. Pulse until finely minced/mixed. Heat a skillet over medium-high heat, add the minced veggie mixture, and sauté for 2–3 minutes until fragrant. Add the ground beef and your seasonings. Cook, breaking the meat apart with a spoon, until browned and fully cooked. (If you like it saucier, stir in a splash of marinara or tomato paste here!)

    3. Fluff and Stuff

Once the potatoes are done, slice them down the center. Use a fork to gently mash and fluff up the inside potato flesh, then drop a small pat of butter into each one to let it melt right in.

    4. Layer the Goodness

Now, load them up! Divide your savory ground beef mixture evenly among the potatoes, pressing it into the centers. Top each meat-stuffed potato with a generous spoonful of cottage cheese, and bury them under a blanket of shredded mozzarella.

    5. Melt and Broil

Pop the baking dish back into the oven under the broil setting for 3 to 5 minutes, just until the mozzarella is completely melted, bubbling, and boasts those beautiful golden-brown spots.

    6. Garnish and Serve

Take them out, top with a generous sprinkle of fresh chopped dill or chives, and serve hot!
