    Crunchy Buffalo Chicken Rice Paper Rolls:

    Ingredients

    • Chicken: Shredded rotisserie or home-cooked chicken.

    • The Mix: 2 tsp Greek yogurt, shredded mozzarella cheese, chopped green olives, buffalo sauce, and 2 sliced green onions.

    • The Wrap: 3 Rice paper sheets.

    • The Soak: 1 egg, 1/4 cup water, and a pinch of dill (whisked).

    Instructions

    1. Mix: Combine your chicken, yogurt, mozzarella, olives, onions, and buffalo sauce in a bowl.

    2. Soak: Dip each rice paper into the egg, water, and dill mixture until flexible.

    3. Assemble: Lay the 3 sheets down (overlapping slightly), add your filling, and roll them up tight.

    4. Air Fry: Cook at 400°F (200°C) for 10 minutes.

    5. The Secret: Add a few extra minutes at the end until they are extra golden and crispy.
