The Base:
4 Rice paper sheets (2 per pie)
1 Large egg and 1 egg yolk (whisked, for dipping)
The Filling:
1 Apple (finely diced)
1 tbsp Honey (plus extra for drizzling)
1 tsp Cinnamon
Instructions
Quick Prep: Preheat your oven to 190°C (375°F).
The Rice Paper Hack: Dip two sheets of rice paper together into the egg wash until they soften. Lay them on a parchment-lined tray and fold the edges in to form a square base. Repeat for the second pie.
Assemble & Bake: Fill the centers with your diced apples, top it with honey and cinnamon. Bake for 12–15 minutes until the edges are golden and puffed up.
Drizzle: Let them sit for a minute to reach maximum crispiness, then hit them with one last drizzle of honey.
