    Crispy High-Protein Cheeseburger Calzone

When you’re too tired to spend an hour cooking but still want to hit your daily protein goal, this lazy Cheeseburger Calzone is the ultimate hack!

By dipping a large tortilla in water before filling and folding, the tortilla stays soft and flexible in the oven, giving the ground beef enough time to cook through completely without burning the outer shell. Stuffed with savory beef, caramelized onions, tangy pickles, and melty mozzarella cheese, brushed with egg yolk, and topped with sesame seeds, it bakes into a golden, crispy pocket that tastes just like a gourmet burger.

    Prep time, Cook time, Servings

    • Prep time: 10 minutes

    • Cook time: 20–25 minutes

    • Yield: 1 large calzone (1 serving)

    Ingredients

    The Tortilla Calzone

    • 1 large flour tortilla (or high-fiber/low-carb tortilla)

    • ¼ lb (115g) extra-lean ground beef

    • 2 tbsp caramelized onions

    • 3–4 dill pickle slices

    • ⅓ cup shredded mozzarella cheese (or cheddar)

    Sealing & Egg Wash

    • 1 egg white (for sealing the edges)

    • 1 egg yolk (for brushing the top)

    • ½ tsp sesame seeds

    Seasoning

    • Salt, black pepper, and garlic powder, to taste

    Step-by-Step Instructions

    1. Dip the Tortilla 💧

Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper. Briefly dip the whole tortilla into a bowl of water to lightly moisten both sides. (Pro tip: Dampening the tortilla prevents the outer crust from burning while giving the raw ground beef enough time to bake fully in the oven!)

    2. Assemble the Cheeseburger Filling 🥩

Lay the damp tortilla flat on the parchment paper. Press the ground beef into a thin layer over one half of the tortilla. Season with salt, black pepper, and garlic powder. Layer the caramelized onions, pickle slices, and shredded mozzarella cheese over the beef.

    3. Seal the Edges 🥚

Brush the egg white along the inner edge of the tortilla. Fold the empty half over the filling to create a half-moon shape. Use a fork to crimp and press the edges firmly together to seal everything inside.

    4. Brush & Decorate ✨

Brush the top of the folded calzone with the egg yolk for that rich, glossy golden finish. Sprinkle sesame seeds over the top.

    5. Bake to Perfection 🥐

Bake at 325°F (165°C) for 20 to 25 minutes until the ground beef is cooked through, the cheese is completely melted, and the crust is golden brown and crispy. Slice in half and enjoy warm!
