Crispy Chicken Fajita Baskets
Here is a fun way to make dinner with your kids on a weekend night, or if you have guests over and you want to impress them! These "baskets" take the classic fajita flavors and turn them into something that looks incredibly fancy. Just be creative with your presentation and let your guests (or the kids!) customize their own.

Ingredients
The Baskets:
4 Large flour tortillas
Cooking spray or olive oil (for brushing)
The Filling:
2 Chicken breasts, sliced into thin strips
1 Red bell pepper, sliced
2 Yellow onion, sliced
1/2 cup Corn (frozen or canned)
Fajita Seasoning: Cumin, smoked paprika, garlic powder, onion powder, salt, and pepper
1 cup Shredded Cheese (Marble or Mexican blend)
The Toppings:
Guacamole (or mashed avocado with red onion and cilantro)
Fresh Lime wedges
Red onion (thinly sliced)
Fresh Cilantro
Cherry tomatoes (for garnish)
Instructions
Prep the Baskets: Preheat your oven to 200°C (400°F). Take your flour tortillas and make a single cut from the edge to the center. Overlap the edges to create a cone/bowl shape and tuck them into a large muffin tin or a small oven-safe dish to hold the shape.
Sauté the Filling: In a large skillet over medium-high heat, cook the chicken strips until browned. Add the peppers, onions, and corn. Sprinkle generously with your fajita seasoning and sauté until the vegetables are tender-crisp.
Fill 'em Up: Divide the chicken and veggie mixture evenly among your four tortilla baskets.
The Cheesy Finish: Top each basket with a handful of shredded cheese.
Bake: Place in the oven for 10–12 minutes, or until the edges of the tortillas are golden brown and crispy, and the cheese is bubbly and melted.
Garnish and Serve: Top each basket with a generous scoop of guacamole, some raw red onions for crunch, a squeeze of fresh lime, and fresh cilantro.
