A light, zesty, and high-protein cake that’s naturally sweetened. It’s incredibly moist and takes less than 15 minutes in the air fryer.
Ingredients:
1/2 cup Greek Yogurt
4 tbsp Shredded Coconut (for that perfect texture)
2 Eggs
1 tsp Vanilla
1 tsp Lemon Zest (optional)
1 tbsp Maple Syrup (plus 1 extra tbsp for after baking)
1/2 Mango (blended into a purée)
1/2 Mango (sliced for decoration)
Mix: Whisk the Greek yogurt, eggs, 4 tbsp of coconut, vanilla, lemon zest, and 1 tbsp of maple syrup until smooth.
Air Fry: Pour into a small dish and air fry at 160°C (320°F) for 12-15 minutes.
Soak: While still hot from the air fryer, drizzle 1 tbsp of maple syrup over the top so it soaks in.
Finish: Layer the mango purée over the top and garnish with the sliced mango.
