A healthy, flourless snack thatβs naturally sweet and incredibly easy to make. These cups are gluten-free and perfect for when you need a quick chocolate fix without the refined sugar.
Ingredients:
The Base:
2 Ripe Bananas (mashed)
Β½ cup Shredded Coconut
1 tbsp Cornstarch
1 tsp Coconut Oil (to grease the muffin tin/molds)
The Jam:
100g Blueberries
1 tbsp Chia Seeds
The Topping:
1 bar Dark Chocolate
1 tsp Coconut Oil (for a smooth finish)
Instructions:
The Base: Mash the bananas and mix with coconut and cornstarch. Grease your muffin tin with coconut oil. Press the mixture into the molds to form small cups.
Air Fry/Bake: Cook at 180Β°C (350Β°F) for about 10β12 minutes until the edges are golden.
The Jam: Microwave blueberries for 2 minutes. Stir in the chia seeds and let it sit for a few minutes to thicken.
The Chocolate: Microwave the dark chocolate with 1 tsp coconut oil in 30-second intervals, whisking in between until completely smooth.
Assemble: Fill each cooled banana cup with a spoonful of blueberry jam and top with a layer of melted chocolate. Let them set in the fridge until the chocolate is firm.
