    High-Protein Stuffed Sweet Potato Flatbread Pockets

    A smart-carb, high-protein twist on stuffed flatbreads! Tender roasted sweet potato combined with flour, shredded cheese, and garlic powder creates a pliable, naturally sweet dough wrapper. Stuffed with savory ground beef, sautéed onions, fresh wilted spinach, and melted mozzarella, these pan-seared pockets are crispy on the outside and warm and cheesy on the inside.

    Ingredients

    Smart-Carb Sweet Potato Dough Base

    • 1 large sweet potato, roasted and peeled (about 1 cup mashed sweet potato)

    • 1/2 to 1 cup flour (all-purpose) depend on how big the potato

    • 1/2 cup shredded part-skim mozzarella cheese

    • 1/2 tsp garlic powder

    • 1/2 tsp onion powder

    • Salt and black pepper, to taste

    Savory Beef & Spinach Filling

    • 1/2 lb extra-lean ground beef

    • 1/2 medium onion, finely diced

    • 2 cups fresh spinach

    • 1/2 tsp garlic powder

    • 1/2 tsp onion powder

    • Salt and black pepper, to taste

    • 1/2 cup shredded mozzarella cheese (for filling assembly)

    • Olive oil (for shaping dough and pan-searing)

    Dipping Sauce (Optional)

    • Creamy roasted tomato/red pepper sauce or Greek yogurt dip

    Step-by-Step Instructions

    1. Roast Sweet Potato: Pierce the whole sweet potato with a fork, drizzle with a little olive oil, and roast at 400°F (200°C) for 40–45 minutes until soft. Remove skin and mash smoothly in a bowl.

    2. Make the Dough Base: Add 1/2 cup flour, 1/2 cup shredded mozzarella, garlic powder, onion powder, salt, and black pepper directly into the mashed sweet potato. Mix and knead into a smooth, cohesive dough.

    3. Cook the Filling: Heat a skillet over medium heat. Add ground beef and diced onions, seasoning with garlic powder, onion powder, salt, and pepper. Cook until beef is browned and onions are soft. Add fresh spinach and cook for another 1–2 minutes until wilted. Remove from heat.

    4. Shape & Stuff the Pockets: Lightly coat your hands with olive oil to prevent sticking and make shaping easy. Divide the dough into equal portions. Flatten a portion of dough onto a piece of plastic wrap, place a mound of beef/spinach mixture in the center, and top with a pinch of shredded mozzarella. Gather the plastic wrap tightly around the filling to form a round ball, then gently flatten into a disc pocket.

    5. Pan-Sear: Heat a skillet with a light drizzle of olive oil over medium heat. Cook the flatbread pockets for 3–4 minutes per side until golden brown, crispy on the edges, and the cheese inside is thoroughly melted.

    6. Serve: Slice open and serve warm with your favorite dipping sauce!
