    Aromatic Steamed Shredded Chicken with Ginger-Scallion Sauce

    A light, high-protein, nourishing dish inspired by classic Hainanese chicken rice! By steaming whole chicken leg quarters over a bed of whole scallions and fresh ginger slices, the meat cooks to melt-in-your-mouth tenderness while naturally releasing a rich, savory essence broth under the bowl. Served shredded over rice and topped with a fresh, punchy ginger-scallion soy dressing, this meal is pure comfort without heavy oils.

    Ingredients

    Steamed Chicken & Essence Base

    • 2 whole chicken leg quarters (skin-on, bone-in)

    • 5–6 whole scallions (green onions), cut into long segments

    • 4–5 thin slices fresh ginger

    • 1/2 cup water (for the steaming pot)

    Ginger-Scallion Dressing

    • 3 scallions, finely chopped

    • 1 tbsp fresh ginger, finely grated

    • 3 cloves garlic, finely grated

    • 2 tbsp low-sodium soy sauce or liquid aminos

    • 1 tbsp oyster sauce

    • 1 tbsp hot sesame oil or light olive oil

    • 1 tsp rice vinegar or lime juice (optional)

    Serving Base

    • 1 to 1.5 cups cooked jasmine or basmati rice (or cauliflower rice for a smart-carb alternative)

    Step-by-Step Instructions

    1. Set Up the Inverted Bowl Steamer: Place an upside-down heat-safe ceramic or glass bowl in the center of a wide-bottomed heat-safe plate, and place the plate inside a large pot or Dutch oven containing about 1/2 cup water.

    2. Layer Aromatics & Chicken: Arrange the long scallion segments and fresh ginger slices over the inverted bowl and plate. Lay the chicken leg quarters directly on top of the aromatics.

    3. Cover & Steam: Cover the pot tightly with its lid. Bring the water to a boil over medium-high heat, then reduce to medium-low and steam for 30–35 minutes until the chicken is cooked through (internal temperature reaches 165°F / 74°C) and tender.

    4. Extract the Essence Broth: Carefully remove the chicken and cooked aromatics from the plate. Using tongs, gently lift the inverted bowl—a rich, concentrated chicken essence broth will release onto the plate! Pour this pure essence into a small bowl to sip or drizzle over your dish.

    5. Shred Chicken & Mix Dressing: Remove and discard the chicken skin, then shred the warm chicken meat off the bones using forks or clean hands. In a small bowl, combine finely chopped scallions, grated ginger, grated garlic, soy sauce, oyster sauce, and hot sesame oil to create your dressing.

    6. Assemble & Serve: Mound cooked rice on a plate, place the shredded chicken next to it, drizzle generously with the ginger-scallion dressing, and serve alongside a cup of the rich chicken essence broth!
